Wisconsin Beer Cheese Soup 🧀

Ingredients (serves 4)
- 3 cups shredded cheddar
- 1 bottle beer
- 2 cups chicken stock
- 1 cup half and half
- 1 onion
- 2 carrots
- 2 stalks celery
- 4 tbsp butter
- 1/3 cup all-purpose flour
- 1 tsp Worcestershire
- 1 tsp Dijon mustard
- 1/2 tsp black pepper

Finely dice the onion, carrots, and celery.

Melt butter in a Dutch oven over medium heat and cook the vegetables 8 minutes until soft.
