Ingredients (serves 4)

  • 1.25 lbs stew beef
  • 1.5 cups barley
  • 1 lb mushroom
  • 1 onion
  • 2 carrots
  • 3 garlic cloves
  • 4 cups beef stock
  • 1 bay leaf
  • 1 teaspoon thyme
  • 2 tablespoons olive oil
  • salt
  • black pepper

    Heat olive oil in a large pot over medium-high heat. Brown stew beef in batches, about 8 minutes total. Set aside.

    In the same pot, sauté diced onion and minced garlic until soft, about 2 minutes.
