Beef and Potato Skillet Dinner 🍳
Ground beef and tender diced potatoes cooked together with onion and simple spices for a quick, filling weeknight dinner that preps ahead.
Ingredients (serves 4)
- 1.5 lbs ground beef
- 1.5 lbs potato
- 1 onion
- 3 cloves garlic
- 1 cup beef stock
- 2 tbsp olive oil
- 1 tsp paprika
- salt
- black pepper
- parsley

Cut potatoes into 1/2-inch cubes. Dice onion and mince garlic.

Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned, about 7 minutes. Remove and set aside.

Add 1 tbsp olive oil to skillet, add potatoes and cook for 8 minutes, stirring occasionally.

Add onion and cook 3 minutes. Stir in garlic and paprika, cook 1 minute.

Return beef to skillet, add beef stock, salt, and pepper. Simmer, covered, for 12 minutes until potatoes are tender.

Uncover and cook 3 minutes to slightly reduce sauce. Divide into containers, top with fresh parsley.
