  • 4 carrots
  • 4 potatoes
  • 1 large onion
  • 6 cloves garlic
  • 2 cups red wine
  • 3 cups beef stock
  • 2 tablespoons tomato paste
  • 2 bay leaves
  • 2 teaspoons dried thyme
  • 3 tablespoons olive oil

    Heat olive oil in a large Dutch oven over medium-high heat. Season beef with salt and pepper, then brown in batches, about 20 minutes total. Remove and set aside.
