Beer Can Chicken 🍺
A backyard favorite gone indoors, the whole bird roasts upright over a beer can for steamy, tender meat and crackly skin.
Ingredients (serves 4)
- 1 whole chicken (4 lb)
- 1 can beer
- 2 tbsp olive oil
- 1 tbsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp brown sugar
- 1 tsp salt
- 1 tsp black pepper

Heat the oven to 400°F with a rack in the lower third. Mix the paprika, garlic powder, onion powder, brown sugar, salt, and pepper.

Pat the chicken dry, rub with olive oil, and coat all over with the spice rub.

Pour out half the beer, then lower the chicken cavity onto the open can so it stands upright. Set it in a deep baking dish or cast iron skillet.

Roast at 400°F until deep mahogany and 165°F in the thigh, about 75 minutes.

Rest 10 minutes, then carefully lift the chicken off the hot can with tongs and a towel.
