  • 1 head cabbage
  • 1 onion
  • 3 cloves garlic
  • 1 tsp smoked paprika
  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar

    Slice the sausage into coins, slice the onion, mince the garlic, and cut the cabbage into 1-inch ribbons, discarding the core.

    Heat 1 tablespoon oil in a 12-inch skillet over medium-high heat and brown the sausage well on both sides, about 5 minutes. Set aside.

    Add the remaining oil and the onion and cook 3 minutes, then pile in the cabbage with a big pinch of salt.

    Cook, stirring every few minutes, until the cabbage is wilted and browned at the edges, 10 to 12 minutes.
