Ingredients (serves 4)

  • 1 head cauliflower
  • 3 tbsp butter
  • 1 onion
  • 2 cloves garlic
  • 1 carrot
  • 4 cups vegetable stock
  • 1 cup milk
  • 2 cups shredded cheddar cheese
  • 1/2 tsp dijon mustard
  • 1/4 tsp nutmeg

    Dice the onion and carrot. Melt the butter in a large pot over medium heat and cook them until soft, about 5 minutes.

    Add minced garlic and cook 1 minute.

    Cut the cauliflower into florets and add with the stock. Simmer until very tender, about 15 minutes.

    Blend the soup smooth, then stir in the milk, dijon, and nutmeg over low heat.

    Off the heat, stir in the cheddar a handful at a time until melted and glossy. Do not boil after adding cheese.
