Ingredients (serves 4)

  • 2 zucchini
  • 2 bell peppers
  • 1 red onion
  • 8 oz mushrooms
  • 1 cup cherry tomatoes
  • 4 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp garlic powder
  • 1 tsp oregano
  • 1 tsp salt
  • 0.5 tsp black pepper

    Cut the zucchini into thick rounds and the peppers and onion into 1.5 inch pieces. Halve any large mushrooms.

    Toss all the vegetables with olive oil, balsamic, garlic powder, oregano, salt, and pepper.
