Ingredients (serves 4)

  • 1.25 lb ground turkey
  • 1/2 cup breadcrumbs
  • 1 egg
  • 6 cups chicken stock
  • 2 carrots
  • 2 celery stalks
  • 3 cups spinach
  • 1 onion
  • 2 garlic cloves
  • 1 teaspoon thyme
  • Salt
  • Black pepper

    Combine ground turkey, breadcrumbs, egg, salt, and pepper. Form into 16 meatballs.

    Dice carrots, celery, and onion. Mince garlic.

    In a large pot, heat 1 tablespoon olive oil. Brown meatballs for 6 minutes on all sides. Remove and set aside.
