  • 1 whole turkey breast (5 lbs)
  • 8 cups water
  • 1/2 cup salt
  • 1/4 cup brown sugar
  • 6 bay leaves
  • 8 sprigs fresh thyme
  • 6 cloves garlic
  • 4 tablespoons butter
  • Black pepper to taste
  • 1 cup chicken stock

    Combine water, salt, brown sugar, bay leaves, thyme, and garlic in a large pot. Stir until salt and sugar dissolve. Cool to room temperature.

    Place turkey breast in a large zip-top bag or container and pour brine over it. Refrigerate for 8 hours or overnight.

    Remove turkey from brine, pat dry, and let come to room temperature for 30 minutes.

    Preheat oven to 375°F. Rub turkey breast with softened butter and season with black pepper.

    Place on a roasting pan and pour chicken stock into the bottom. Roast for 50 to 60 minutes until internal temperature reaches 165°F.
