Ingredients (serves 4)
- 2 lbs chicken thighs
- 12 oz mushrooms
- 1 onion
- 4 cloves garlic
- 1 1/2 cups chicken stock
- 1/2 cup white wine
- 2 sprigs thyme
- 2 tbsp butter
- 2 tbsp olive oil
- 1/4 cup heavy cream

Season the chicken with salt and pepper. Heat olive oil in a deep skillet over medium-high heat and brown the thighs skin side down 5 minutes, then flip for 3 minutes. Set aside.

Melt the butter and cook the quartered mushrooms and sliced onion for 6 minutes until browned, then add garlic for 1 minute.
