Ingredients (serves 4)

  • 1.5 lbs chicken breast
  • 1 cup all-purpose flour
  • 2 eggs
  • 2 cups panko
  • 1/2 cup grated parmesan
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp salt
  • 3 tbsp olive oil
  • 1/2 cup ketchup

    Heat the oven to 425°F and set a wire rack on a baking sheet.

    Cut the chicken into bite-size nuggets about 1.5 inches across and season with salt.
