Pork with Snow Peas 🫘
Tender pork slices with crisp snow peas in a light, ginger-forward sauce-delicate, elegant, and satisfying in under 30 minutes.
Ingredients (serves 4)
- 1.25 lb pork tenderloin
- 3 cups snow peas
- 1/4 cup soy sauce
- 1 tbsp rice vinegar
- 1 tbsp honey
- 1 tbsp sesame oil
- 4 cloves garlic
- 1.5 tbsp ginger
- 2 tbsp vegetable oil
- 2 scallions
- 1 tsp cornstarch

Slice pork tenderloin thinly against the grain.

Heat 2 tbsp vegetable oil in a large skillet over high heat. Cook pork until no longer pink inside, about 4 minutes. Remove and set aside.

Add minced garlic and ginger to the skillet and cook for 30 seconds until fragrant.

Add snow peas to the skillet and stir-fry for 2 minutes until just tender-crisp.

Whisk together soy sauce, rice vinegar, honey, sesame oil, and cornstarch mixed with 2 tbsp water. Pour into the skillet and return pork. Simmer for 1-2 minutes until sauce thickens.
