Red Wine Braised Beef 🍷
Chunks of beef braised in red wine and herbs until spoon tender, with a sauce worth mopping up with bread.
Ingredients (serves 6)
- 2.5 lbs stew beef
- 1.5 cups red wine
- 2 cups beef stock
- 3 carrots
- 1 onion
- 3 tbsp tomato paste
- 4 cloves garlic
- 3 sprigs thyme
- 2 bay leaves
- 2 tbsp all-purpose flour
- 2 tbsp olive oil

Preheat the oven to 325°F. Season the beef with salt and pepper and toss with the flour.

Heat the oil in a large Dutch oven over medium high heat and brown the beef in batches, about 8 minutes total. Set aside.

Cook the diced onion for 4 minutes, then stir in the garlic and tomato paste for 1 minute.

Pour in the red wine, scraping up the browned bits, and simmer for 3 minutes to cook off the alcohol.

Add the beef stock, chunked carrots, thyme, bay leaves, and the beef. Cover and braise in the oven until the beef is fork tender, about 70 minutes.

Discard the herbs, skim any fat, and season the sauce to taste.

Serve over mashed potatoes with the sauce spooned on top.
