  • 1 lb pork tenderloin
  • 3 cups rice
  • 3 eggs
  • 1 cup peas
  • 4 garlic cloves
  • 3 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 1 scallion
  • salt
  • white pepper

    Cook rice a day ahead and chill, or use leftover rice.

    Dice pork tenderloin finely. Heat 1 tablespoon oil in a wok over high heat, stir-fry pork until cooked through, about 5 minutes. Remove and set aside.

    In the same wok, scramble eggs until cooked, remove and set aside.

    Add remaining sesame oil to the wok. Add minced garlic and cook for 30 seconds until fragrant.

    Add rice and peas, breaking up clumps, stirring constantly for 3 minutes.

    Return pork and eggs to the wok. Pour in soy sauce, toss everything together for 1 minute. Season with white pepper and serve garnished with sliced scallions.
