Country Pork Stew 🥘
Browned pork and sweet potatoes braised in a savory cider-splashed broth, cozy farmhouse flavor in one pot.
Ingredients (serves 4)
- 1.5 lb pork tenderloin
- 2 sweet potatoes
- 2 carrots
- 1 onion
- 3 cloves garlic
- 3 cups chicken stock
- 2 tbsp apple cider vinegar
- 1 tsp dried thyme
- 1 tsp paprika
- 2 tbsp all-purpose flour

Cut the pork into 1-inch cubes, season with salt, pepper, and paprika, and toss with the flour.

Heat 2 tbsp oil in a Dutch oven over medium-high heat and brown the pork in batches, about 4 minutes per batch. Set aside.
