Dirty Rice 🍛
A one-pot Cajun favorite where browned pork, peppers, and spice season every grain of rice with big Southern flavor.
Ingredients (serves 4)
- 1 lb ground pork
- 1 1/2 cups rice
- 1 onion
- 1 bell pepper
- 2 stalks celery
- 3 cloves garlic
- 3 cups chicken stock
- 1 tsp smoked paprika
- 1/2 tsp cayenne
- 1/2 tsp dried thyme
- 3 scallions

Dice the onion, bell pepper, and celery and mince the garlic. Slice the scallions and set aside.

Brown the pork in a large deep skillet over medium-high heat, breaking it up, until deeply browned, about 6 minutes.

Add the onion, pepper, and celery and cook until soft, about 5 minutes, then stir in the garlic, paprika, cayenne, and thyme for 1 minute.

Stir in the rice to coat in the drippings, then pour in the stock and season with salt.

Cover, reduce to low, and simmer until the rice is tender and the liquid absorbed, about 18 minutes.

Rest covered for 5 minutes, then fluff with a fork and finish with the scallions and plenty of black pepper.
