Ingredients (serves 4)

  • 1.5 lbs ground beef
  • 1 lb egg noodles
  • 2 cups mushroom
  • 1 onion
  • 3 cloves garlic
  • 1 cup beef stock
  • 1/2 cup sour cream
  • 2 tbsp butter
  • 1 tbsp dijon mustard
  • salt
  • black pepper
  • parsley

    Cook egg noodles according to package directions. Drain and set aside.

    Dice onion, slice mushrooms, mince garlic. Heat 1 tbsp butter in a large skillet over medium-high heat.

    Add ground beef and cook until browned, about 7 minutes, breaking it apart with a spoon. Remove and set aside.

    Add 1 tbsp butter to skillet, cook mushrooms and onion until softened, 4 minutes.

    Add garlic and cook 1 minute. Return beef to skillet.

    Stir in beef stock and dijon mustard. Simmer 5 minutes.

    Remove from heat, stir in sour cream. Season with salt and pepper.

    Combine noodles with stroganoff sauce in containers, top with fresh parsley.
