Ingredients (serves 4)

  • 2 tbsp olive oil
  • 1 onion
  • 1 bell pepper
  • 4 cloves garlic
  • 45 oz black beans
  • 4 cups vegetable stock
  • 2 tsp cumin
  • 1 tsp smoked paprika
  • 1 lime
  • 1/4 cup cilantro

    Dice the onion and bell pepper. Heat the olive oil in a large pot over medium heat and cook them until soft, about 6 minutes.
