  • 1 lb sausage
  • 1 onion
  • 4 cloves garlic
  • 3 potatoes
  • 6 cups chicken stock
  • 1 cup heavy cream
  • 1 bunch kale
  • 1/2 tsp red pepper flakes
  • 1/4 cup parmesan

    Brown the sausage in a large pot over medium-high heat, breaking it into crumbles, about 6 minutes. Drain all but 1 tbsp of fat.

    Add the diced onion and cook until soft, about 4 minutes, then stir in minced garlic and red pepper flakes for 1 minute.

    Add the stock and the potatoes, halved and sliced 1/4 inch thick. Simmer until the potatoes are tender, about 12 minutes.

    Strip the kale from its stems, tear into bite-size pieces, and stir it in. Simmer 4 minutes until wilted.

    Stir in the cream and warm through without boiling. Season with salt and pepper.
