Ingredients (serves 4)

  • 1 onion
  • 3 cloves garlic
  • 1 cup breadcrumbs
  • 1 egg
  • 1 jar marinara sauce
  • 2 cups pasta
  • 1 zucchini
  • 1 bell pepper
  • 2 tbsp olive oil
  • salt
  • black pepper
  • italian seasoning

    Preheat oven to 400°F. Cook pasta according to package directions, drain, set aside.

    Finely mince onion and garlic. Combine with ground turkey, breadcrumbs, egg, salt, pepper, and italian seasoning in a bowl.

    Roll mixture into 16 meatballs (about 2 oz each). Place on a parchment-lined baking sheet and drizzle with olive oil.

    Bake meatballs for 20 minutes until internal temp reaches 165°F.

    Dice zucchini and bell pepper. Toss with 1 tbsp olive oil, salt, and pepper on another baking sheet.
