Smothered Pork Chops 🍖
Golden seared chops buried under a rich onion gravy, the Southern comfort classic that begs for mashed potatoes.
Ingredients (serves 4)
- 4 bone-in pork chops
- 2 onions
- 3 cloves garlic
- 2 tbsp all-purpose flour
- 1.5 cups chicken stock
- 0.5 cup heavy cream
- 2 tbsp butter
- 1 tsp paprika
- 1 tsp dried thyme
- salt and black pepper

Pat the pork chops dry and season both sides generously with salt, pepper, and paprika.

Melt the butter in a 12-inch skillet over medium-high heat and sear the chops 4 minutes per side until deep golden. Move to a plate.

Slice the onions thin, add to the same skillet, and cook over medium heat until soft and browned, about 10 minutes. Stir in the minced garlic and thyme for 1 minute.

Sprinkle the flour over the onions, stir for 1 minute, then slowly whisk in the chicken stock until smooth.

Stir in the heavy cream, return the chops and their juices to the pan, cover, and simmer gently until the pork reaches 145°F, about 10 minutes.
